I made these as a side dish with dinner and was very pleased with the outcome. I love lentils and try to incorporate them in menus when I remember to buy them…lol. I am a big fan of the pre-cooked Steamed Lentils by Trader Joe’s. The are fully cooked and ready in about 3-4mins. Recipe Ingredients:

2 Cups cooked French Lentils (or lentils of your choosing)

2 Tablespoons rendered bacon fat*

2 Shallots, thinly sliced

1 teaspoon salt

1 teaspoon freshly ground black pepper

1 Tablespoon fresh thyme leaves (or more, to taste)

2 Tablespoons whole grain dijon mustard

2 Tablespoons honey

2 Tablespoons apple cider vinegar

2 Tablespoons apple cider

Directions:

Heat the fat in a heavy skillet on medium

Heat lentils for 3 mins in microwave (if cold)

Add the sliced shallots and cook until softened, about 3 mins.

Add salt, pepper and thyme; stir one minute

Add honey, mustard and vinegar; stir one minute

Add lentils and stir until combined. Add apple cider. Turn off heat. Serve warm.

 

*Note: if you have an aversion to pork fat, you may substitute Extra Virgin Olive Oil or Solid vegetable shortening (like Crisco)
