I made these as a side dish with dinner and was very pleased with the outcome. I love lentils and try to incorporate them in menus when I remember to buy them…lol. I am a big fan of the pre-cooked Steamed Lentils by Trader Joe’s. The are fully cooked and ready in about 3-4mins. So this recipe takes all of 10 mins total and is so delicious. http://www.traderjoes.com/fearless-flyer/article.asp?article_id=976 Image

Heat the fat in a heavy skillet on medium

Heat lentils for 3 mins in microwave (if cold)

Add lentils and stir until combined. Add apple cider. Turn off heat. Serve warm.

*Note: if you have an aversion to pork fat, you may substitute Extra Virgin Olive Oil or Solid vegetable shortening (like Crisco)
